Ground Caribou Soup

Ingredients
1 pound ground caribou meat
2 tablespoons garlic powder
1 large onion, chopped
1 cup water
3 teaspoons ground bay leaf
½ teaspoon ground black pepper
1 ½ teaspoons dried thyme
1 cup barley
1 teaspoon bouillon, low-sodium
2 cups carrots, sliced
2 cups celery, chopped
1 cup cabbage, shredded

Instructions
- In a large stock pot, brown the ground caribou with garlic and onion. Drain excess fat.
- Add water, ground bay leaf, black pepper, thyme, barley, and bouillon. Bring to a boil and let simmer for at least an hour.
- Add carrots and celery; bring to a simmer.
- Add cabbage 20 minutes before serving.
Cooking Tip
This stew can also be made in a slow-cooker!
