Grilled Eggplant with Tangy Yogurt Sauce

1 small (463 grams) eggplant, sliced into 12 equal slices
1 cup Greek yogurt
1 teaspoon sumac
Pinch sea salt
½ teaspoon zaatar
2 tablespoons lemon juice
2 teaspoons parsley, chopped
Special Equipment
1 grill pan
Instructions
- Heat a grill or grill pan. Spray grill pan with cooking spray.
- Grill the eggplant slices until cooked through (about 3 to 5 minutes per side)
- Combine the yogurt, sumac, salt, zaatar, and lemon juice.
- Serve 3 slices per person, with a generous dollop of the yogurt sauce.
- Garnish each serving with chopped parsley.
Cooking Tip
Alternatively, place sliced eggplant on a cooking tray and in the oven at 400°F for 5 minutes on each side. Make sure not to slice the eggplant too thin to keep the center soft.
