Green Breakfast Soup

2 cups spinach
1 avocado, halved
2 cups low-sodium vegetable or chicken broth
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
Black pepper, freshly grounded, to taste
Instructions
- In a blender or food processor, add the spinach, avocado, broth, coriander, cumin, and turmeric. Process until smooth.
- Transfer the mixture to a small saucepan over medium heat, and cook until heated through, 2 to 3 minutes. Season with pepper.
