Garlic Apricot Rice Blend

Ingredients

½ cup medium grain brown rice, dry

¼ cup wild rice, dry

2 cups water

1 teaspoon oil

2 tablespoons olive oil

1 tablespoon lime juice

½ teaspoon lime zest

1 tablespoon garlic, minced (3 cloves)

2 teaspoons sugar

2 teaspoons dried tarragon leaves or 2 tablespoons fresh, chopped (may substitute with parsley)

½ teaspoon ground sage

½ teaspoon sea (kosher) salt

¼ teaspoon pepper

¼ teaspoon ground nutmeg

⅓ cup dried apricots, chopped (may use dried peaches or nectarines)

¼ cup fresh basil, chopped

Instructions

  1. Rinse the brown and wild rice under cold water until water runs clear.
  2. In a large pot, bring water and teaspoon of oil to a boil. Add in the brown and wild rice.
  3. Stir to distribute and bring back to a boil. Reduce heat, cover, and simmer for 25 to 55 minutes or until liquid is absorbed, and rice is tender (cooking time will vary depending on rice used, pan used, and heat from the stove).
    1. If using precooked rice, use 1 ½ cups brown and ¾ cup wild.
    2. If using a store-bought blend, make sure product yields at least 2 ¼ cups when cooked.
  4. While rice is cooking, prepare remaining ingredients.
  5. In a small sealable jar, place the 2 tablespoons olive oil, lime juice and zest, garlic, sugar, tarragon (dried or fresh), sage, salt, and pepper. Shake vigorously until well combined (may use a blender).
  6. When rice is done, remove from heat, remove cover and place a clean dish towel over top. Let rest 5 minutes then fluff with a fork.
  7. When rice is rested and fluffed, stir in the apricots and basil.
  8. Give the oil mixture a good shake to make sure it is combined (it should look almost creamy) then stir into the rice.
  9. Serve ½ cup per person alongside your favorite protein.

Cooking Tip

May top with ground nuts for a bit of crunch.
