Fruit and Nut Broccoli Slaw

Crisp, crunchy vegetables with a kiss of lime, a hint of peanut, and pops of cherry. A light side dish or add protein to make it a meal.

Ingredients

1 ½ cups broccoli slaw

4 tablespoons (42 grams) dried cherries

½ teaspoon lime zest

3 tablespoons (35 grams) no salt dry roasted peanuts, halved or crushed (or cashews)

4 tablespoons fresh lime juice

6 tablespoons peanut oil (or olive oil)

2 teaspoons dried tarragon

2 teaspoons dried oregano

2 teaspoons Swerve® powdered (or superfine caster sugar)

Instructions

  1. Combine broccoli slaw, cherries, lime zest, and nuts in a large bowl.
  2. In a sealable jar or container, add lime juice, oil, tarragon, oregano, and sugar.
  3. Shake well until combined and pour over slaw mix.
  4. Toss well and serve ½ cup per person.

Cooking Tip

You can add in pork or tempeh bacon for more flavor. If desired, chop the slaw mix up to make it easier to eat.
