Frozen Key Lime Pie
This frozen treat will be a huge hit for a summer party, and you can whip it up quickly and easily. Great for summer celebrations.

CRUST INGREDIENTS:
1 cup all-purpose flour
½ cup cashews, unsalted, chopped
½ cup shredded coconut, unsweetened
¼ cup light brown sugar, packed
½ cup butter, unsalted
FILLING INGREDIENTS:
6 extra-large egg yolks, at room temperature
¼ cup sugar
1 14-ounce can condensed milk, sweetened
2 tablespoons lime zest, freshly grated
¾ cup key lime juice or regular lime juice, freshly squeezed
Additional lime slices and zest of lime for garnish
Dollop of crème fraiche (optional garnish)
Special Equipment:
9-inch spring-form pan or pie plate
Electric mixer
Instructions
CRUST DIRECTIONS:
- Preheat oven to 350°F.
- Combine flour, cashews, coconut and brown sugar in a small bowl.
- Stir in butter.
- Spread onto a greased 9-inch spring-form pan or pie plate.
- Bake for 20-25 minutes or until golden brown.
- Cool on a wire rack.
FILLING DIRECTIONS:
- Beat the egg yolks and sugar with an electric mixer on high speed for 5 minutes.
- Add the condensed milk, lime zest and lime juice. Mix well with a spoon.
- Pour into the baked pie shell and freeze 4-5 hours until solid.
- Garnish with thin slices of lime and lime zest.
- Serve with an optional dollop of creme fraiche.
Cooking Tip
Remove from the freezer for 5-10 minutes before serving. Slice with a warm knife (heat under hot running water) for smooth, clean slices and a beautiful presentation.
