Fried Green Tomatoes

Frying green tomatoes is a Southern tradition. Our version uses kidney-friendly cornmeal, for a crispy result. Green tomatoes are tart, but the breading and cooking process sweetens them a little, balancing their flavor and making them a terrific side dish for barbecued meat or next to a grilled hamburger.

Ingredients
5 thyme sprigs, fresh, leaves removed from stems
¾ cup cornmeal flour (34 grams remaining after cooking)
1 large egg
2 tablespoons water
½ cup olive oil (plus more if necessary)
4 small (364 grams) green tomatoes (un-ripened), cut into 10, ½ inch slices
¼ teaspoon sea salt (optional, not included in nutrient analysis)
Instructions
- Pluck thyme leaves from the stems and place on a cutting board. Roll over the leaves with a rolling pin (or wine bottle) to release the oils.
- Combine cornmeal, thyme, salt (if using) in a paper or plastic bag. Shake.
- Crack egg into a small bowl. Add water. Beat well with a fork.
- Add olive oil to a large skillet and heat over medium heat.
- Place 5 slices of tomato in the bag with flour. Shake well enough to coat the tomato slices. Repeat with remaining tomato slices.
- Place all coated tomatoes on a cutting board. Dip them one at a time into the beaten egg until well coated.
- Return moistened tomato slices back to the bag, one at a time to coat.
- Transfer the coated tomato slices to the hot skillet; do not crowd the skillet. Cook in batches so there is plenty of space around the tomatoes as they cook.
- Cook until golden brown on both sides, about 6 minutes.
- Drain on paper towels.
- Serve tomatoes while warm as a side dish.
Cooking Tip
Be creative when you consider accompaniments with this side dish. Because they are a bit tart, serve in the same way you would pickles.
