Five-Spice Chicken Lettuce Wraps

Lettuce wraps are a common street food in Asia, filled with exotic ingredients and spices. Boston lettuce leaves are the best choice for the wrap part of the recipe because they are thin and do not have a stiff rib down the center. Green or red-leaf lettuce also works well if you use the outer leaves.

6 ounces cooked chicken breast, minced
1 scallion, both green and white parts, chopped
½ red apple, cored and chopped
½ cup bean sprouts
¼ English cucumber, finely chopped
Juice of 1 lime
Zest of 1 lime
2 tablespoons fresh cilantro, chopped
½ teaspoon Chinese five-spice powder
8 Boston lettuce leaves
Instructions
- In a large bowl, mix together the chicken, scallions, apple, bean sprouts, cucumber, lime juice, lime zest, cilantro, and five-spice powder.
- Spoon the chicken mixture evenly among the 8 lettuce leaves.
- Wrap the lettuce around the chicken mixture and serve.

Use low-sodium soy sauce as a healthier dipping sauce
