Fiesta Veggie Bowl

Ingredients

1 ½ cups (15 ounce can) no salt added black beans

4 tablespoons sour cream

4 tablespoons taco sauce

¼ teaspoon kosher salt

2 cups shredded lettuce

1 cup bell pepper, diced

1 cup roma tomatoes, diced

¼ cup jalapeños, seeds, pith removed, diced

¼ cup fresh cilantro, chopped

¼ cup green onions, sliced (about 2 medium)

¼ cup radishes, chopped

2 ounces shredded cheddar cheese

1-ounce corn chips (like Frito’s®), crushed

Instructions

  1. Drain and rinse the black beans. Set aside. If desired, you may warm them.
  2. Mix the sour cream, taco sauce and salt together.
  3. In a large bowl, toss the beans, lettuce, bell pepper, tomato, jalapeno, cilantro, green onions, radishes, and cheese together then add the sauce and mix well.
  4. Serve 1 ½ cups per person with 1 tablespoon of corn chips on top.

Cooking Tip

Instead of sour cream and shredded cheddar, can use nondairy sour cream and vegan cheddar shreds to make this recipe vegan. Nutrient calculations may differ.
