Festive Turkey Meatball Skewers
Zucchini is a summer staple! Served on skewers, this easy appetizer will be perfect for when you are ready to fire up the grill! Grilling brings out the sweetness of the vegetables without any need for salt. Pair it with some salad or rice if you are looking for a light lunch.

Ingredients
1 pound lean ground turkey (93% lean, 7% fat)
½ cup panko plain breadcrumbs
1 large egg
1 large (150 grams) onion (½ minced, ½ cut into 1-inch chunks)
1 teaspoon Mrs. Dash® salt free seasoning
1 teaspoon garlic powder
1 teaspoon dried basil
1 large (323 grams) zucchini (cut into 1-inch chunks)
1 large (164 grams) bell pepper (cut into 1-inch chunks)
Special Equipment:
Barbecue Skewers
Wooden or metal skewers (if using wooden skewers, soak for 30 minutes so they do not catch on fire)
Grill pan or outdoor grill (optional)
Instructions
- Combine the ground turkey, panko, egg, minced onion, Mrs. Dash®, garlic powder and basil in a large bowl. Mix well with a spoon or very clean hands.
- Form approximately 24 (1-inch) meatballs. Set aside.
- Thread the meatballs and veggies onto the skewers, alternate zucchini, meatball, bell pepper and onion on each skewer. Use 3 meatballs and 3 to 5 pieces of vegetables per skewer.
- Grill for 10 to 15 minutes, or until the meatballs are cooked thoroughly.
- Serve with side salad or rice.
Cooking Tip
No grill? No problem! Simply bake these for 20 to 24 minutes at 375°F.
