Fall Acorn Cookies

Who says acorns are only for squirrels to enjoy? These acorn cookies are a delectable fall treat that is great for parties, but they also store well for personal enjoyment for a couple of weeks.

¾ cup sunflower butter, unsalted
½ cup brown sugar
1 teaspoon vanilla extract
1 large egg
1 tablespoon ground flax seeds
½ cup mini chocolate chips
45 Hershey kisses

Instructions
- Preheat oven to 350°F.
- Spray a baking sheet with cooking spray.
- Mix sunflower butter, brown sugar, vanilla extract, egg and flax seeds together in a large bowl using a hand mixer on low-medium speed. Continue to mix until ingredients are well combined and form a sticky dough.
- Spoon ⅓ teaspoon balls onto a baking sheet. Bake for 5 to 10 minutes or until balls are golden brown.
- Cool cookies for 5 minutes.
- Melt ¼ cup of chocolate chips in the microwave. Microwave for 30 second intervals, stirring after each 30 seconds. Continue until chocolate chips are melted.
- Dip Hershey kiss in melted chocolate and attach to the bottom of the cookie. Dip a mini chocolate chip in chocolate and attach to the top side of the cookie.
- Cool cookies in the fridge for at least 30 minutes.
Cooking Tip
To form small balls of dough easily, moisten hands with water to nudge dough off the teaspoon and into a nice round shape. Be sure to cool the cookies well before adding the chocolate kisses.
