Makes

10 servings (20 squares)

Serving size

2 squares

Ingredients

1½ cups oats (regular or quick), uncooked
½ cup peanut butter, creamy
½ cup honey
3/8 cup mini chocolate chips, semi-sweet
1½ teaspoons vanilla extract
1/2 cup of crushed unsalted peanuts
3/8 cup flax seeds, ground

Instructions

  1. Fold ingredients together until well combined.
  2. Lay parchment in a 9×13 pan, making sure it goes up and over the sides for easy removal.
  3. Oil hand with coconut oil and push mixture down into pan. Roll the bars in nuts/seeds before chilling and cutting.
  4. Chill 1 hour in fridge. Using the parchment, remove from pan, then cut into squares. Keep chilled to retain shape. Will keep for 5-7 days.

Cooking Tip

For added texture, you can mix in crushed cashews, or sunflower seeds.
