Energy Bites
Easy to make, delicious to eat! You can make these nutritious bites on the weekend, and keep them refrigerated for when you need to quickly satisfy your hunger throughout the day.

Ingredients
1½ cups oats (regular or quick), uncooked
½ cup peanut butter, creamy
½ cup honey
3/8 cup mini chocolate chips, semi-sweet
1½ teaspoons vanilla extract
1/2 cup of crushed unsalted peanuts
3/8 cup flax seeds, ground
Instructions
- Fold ingredients together until well combined.
- Lay parchment in a 9×13 pan, making sure it goes up and over the sides for easy removal.
- Oil hand with coconut oil and push mixture down into pan. Roll the bars in nuts/seeds before chilling and cutting.
- Chill 1 hour in fridge. Using the parchment, remove from pan, then cut into squares. Keep chilled to retain shape. Will keep for 5-7 days.
Cooking Tip
For added texture, you can mix in crushed cashews, or sunflower seeds.
