Empanadas
There are many types of empanadas. This recipe is cooked with lean ground beef, zucchinis, and tomatoes.

Ingredients
½ pound lean ground beef
½ tomato, chopped
¼ cup onion, chopped
6 zucchinis, sliced
½ teaspoon freshly ground black pepper
2 cups flour
¼ cup cooking oil
½ cup ice cold water
Instructions
- Preheat oven to 300°F.
- Cook ground beef, tomato, onion, zucchini and pepper, in skillet on medium-high heat. Then set aside.
- Mix flour and oil and add cold water, a little at a time, until mixture is moist. Let stand for 30 minutes.
- Divide dough into 12 balls or patties and roll each piece into a tortilla.
- Fill each tortilla with ground beef mixture.
- Fold over and seal edges with water. Bake 40 minutes.
Cooking Tip
Choose a leaner ground beef to further reduce saturated fat.
