Easy Anytime Soup
This simple yet delicious green soup is packed with nutrients. You can whip it up for an impromptu meal and impress your family or guests with your speedy from scratch cooking!

Ingredients
4 cups water
4 ounces spinach, frozen
1 small (118 g) zucchini, sliced thickly
½ (113 g) avocado, black skin, California type
4 tablespoons olive oil
½ cup basil leaves
¼ teaspoon cumin seeds, grounded
¼ teaspoon coriander seeds, grounded
½ lemon, juiced
A pinch of sea salt (optional)
Instructions
- Heat the water in a medium sized saucepan over high heat.
- Add in the spinach and zucchini and bring to boil.
- Simmer for 4 minutes, or until the zucchini is softened.
- Remove from heat. Strain and reserve the cooking water.
- Blend cooked vegetables in a blender at high speed, with ¾ of the cooking water, avocado, and olive oil.
- Add basil and spices and blend again until smooth.
- Adjust the seasoning to taste with lemon juice and salt, if desired.
- Serve in bowls and garnish with basil. Enjoy!
Cooking Tip
If preparing a meal for just yourself, you can freeze the remaining servings and defrost when you are low on groceries and need a healthy meal. You can store it in the freezer for up to two months.
