Curried Tofu Salad

This quick and easy salad packs a punch of flavor from curry powder, a hint of sweetness from raisins and a wonderful crunch from walnuts and carrots. You will love that this delicious combination of tastes and textures comes together in just 10 minutes.

Ingredients

7 ounces (200 grams) firm tofu, crumbled

⅓ cup (50 grams) raisins

1 medium (60 grams) carrot, grated

3 tablespoons walnuts, unsalted, chopped

3 tablespoons vegan mayonnaise (used Kühne® for nutrient analysis)

1 ½ tablespoons curry powder

1 teaspoon black pepper, freshly ground

Pinch of sea salt

3 scallions (35 grams), sliced

Instructions

  1. Combine the crumbled tofu, raisins, carrot, and walnuts in a large bowl.
  2. Add the vegan mayonnaise, curry powder, black pepper and pinch of salt.
  3. Mix until evenly combined.
  4. Divide into 4 individual servings.
  5. Garnish each serving with a sprinkle of sliced scallions.

Cooking Tip

Some curry powders have salt added to them. Be sure to read the food label when purchasing curry powder and choose one without “salt” in the ingredient list to avoid the excess sodium.
