Red grapes provide a pleasing burst of color in this white and green salad, so look for fruit with the deepest red or purple hue.

Choosing colorful grapes has a benefit beyond a visual impact: this deep color means the grapes are packed with antioxidants. Antioxidants have many health benefits.

Ingredients

8 ounces cooked chicken, shredded

1 scallion, white and green parts, chopped

½ cup seedless red grapes, halved

1 celery stalk, chopped

¼ cup Low-Sodium Mayonnaise (or store-bought mayonnaise)

A pinch freshly ground black pepper

4 large lettuce leaves, butter or red leaf

Instructions

  1. In a medium bowl, stir together the chicken, scallion, grapes, celery, and mayonnaise until well mixed.
  2. Season the mixture with pepper.
  3. Spoon the chicken salad onto the lettuce leaves and serve.

Cooking Tip

One of the freshest kinds of butter lettuce you can buy is a hydroponic variety sold with the roots still attached. Most supermarkets carry these heads, and they are so fresh you might swear you could see dew on the leaves.
