Crunchy Chicken Salad Wraps

8 ounces cooked chicken, shredded
1 scallion, white and green parts, chopped
½ cup seedless red grapes, halved
1 celery stalk, chopped
¼ cup Low-Sodium Mayonnaise (or store-bought mayonnaise)
A pinch freshly ground black pepper
4 large lettuce leaves, butter or red leaf
Instructions
- In a medium bowl, stir together the chicken, scallion, grapes, celery, and mayonnaise until well mixed.
- Season the mixture with pepper.
- Spoon the chicken salad onto the lettuce leaves and serve.
Cooking Tip
One of the freshest kinds of butter lettuce you can buy is a hydroponic variety sold with the roots still attached. Most supermarkets carry these heads, and they are so fresh you might swear you could see dew on the leaves.
