Cream Cheese Pumpkin Muffins
Heavenly, decadent and not too sweet. These muffins are like having a piece of pumpkin pie with a crunchy nut crust. A small but satisfying portion with no guilt!

Ingredients for Cake:
12 tablespoons (3.25-ounces) pecan halves, chopped small or ground
2-ounces whipped cream cheese
2-ounces crème fraiche
½ cup (4.75-ounces) pumpkin puree
4 tablespoons (1.85 ounces) Swerve® brown sweetener
1 large egg
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
¼ teaspoon allspice
⅛ teaspoon kosher salt
2 tablespoons besan (chickpea) flour
Ingredients for Frosting:
4-ounces whipped cream cheese
2 tablespoons unsalted butter, softened
1 tablespoon crème fraiche
6 tablespoons Swerve® powdered sweetener
1 tablespoon pumpkin puree
¼ teaspoon vanilla
⅛ teaspoon nutmeg

Instructions
Instructions for Cake:
- Preheat oven to 350°F.
- Line a muffin tin with cupcake liners and place 1 tablespoon of chopped or ground pecans at the bottom of each.
- In a large bowl, beat the cream cheese, crème fraiche, pumpkin puree, sweetener, egg, vanilla, pumpkin pie spice, allspice and salt together until well combined. Add the flour and mix until it just comes together.
- Scoop 1-ounce (2 tablespoons) into each muffin liner.
- Bake 20 to 25 minutes on the middle rack, until tops look dry and no batter sticks to your finger when touched.
- Remove and let cool. When cool enough to handle, place into the fridge for at least 45 minutes to fully set.
Instructions for Frosting and Assembly:
- Mix all the frosting ingredients together until well combined. Chill until ready to use.
- Top each muffin with frosting. Sprinkle ground nuts and cinnamon on top (if desired) and serve.
Cooking Tip
If desired, add ¼ cup diced dried cranberries or cherries to the batter. You may reduce the amount of the nuts used but do not remove. If needed, sour cream can be substituted for crème fraiche.
