Cranberry Bars

INGREDIENTS FOR BASE:
½ cup (58 grams) almond flour
¼ cup (20 grams) gluten free oat bran
¼ cup (30 grams) pecans, chopped
½ teaspoon baking powder
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon coarse salt
2-ounces (60 grams) Lily’s® no sugar added white chocolate chips
2 tablespoons (25 grams) dried cranberries
¼ cup unsalted butter, softened
4 tablespoons (40 grams) Swerve® granular sugar
4 tablespoons (32 grams) Allulose sweetener (or more Swerve®)
2 large eggs
¾ teaspoon orange extract
½ teaspoon vanilla extract
⅛ teaspoon almond extract
½ teaspoon orange zest
INGREDIENTS FOR TOPPING:
2-ounces cream cheese, room temperature
4-ounces mascarpone cheese (or more cream cheese)
2-ounces heavy cream
4 tablespoons (40 grams) Swerve® powdered sugar
¾ teaspoon orange extract
½ teaspoon vanilla extract
½ teaspoon orange zest
2 tablespoons (25 grams) dried cranberries
1 ½-ounces (45 grams) Lily’s® no sugar added white chocolate chips

Instructions
- Preheat oven to 350°F.
- Line an 9×9 baking pan with parchment paper.
- In a food processor, process the almond flour, oat bran, pecans, baking powder, ginger, nutmeg, allspice, salt, white chocolate chips, and dried cranberries until pecans, chocolate and cranberries are in small bits.
- Add the butter, sweeteners, eggs, extracts, and zest. Process until well combined.
- Pour into the baking pan, spread evenly, and bake 25 to 30 minutes or until edges just start to turn brown. Remove and let cool completely.
- Topping: Beat the cream cheese, mascarpone, heavy cream, sweetener, extracts, and zest together until smooth, about 1 to 2 minutes on medium speed.
- Stir in the dried cranberries and white chocolate chips. If mixture is too thick, add 1 tablespoon of water at a time until desired consistency. Should be thick but spreadable.
- Spread evenly over the fully cooled bars.
- If desired, chill before serving. Cut into 16 bars (3 cuts on each side, each 3-inches apart).
Cooking Tip
May use cashews instead of pecans and may use cherries instead of cranberries (this will raise carbs and other nutrition values).
