Couscous with Peas and Mint

COUSCOUS INGREDIENTS:
1 ⅓ cups couscous, dry
½ cup frozen peas, thawed
1 ¾ cups boiling water
¼ cup raisins
½ cup mint leaves, chopped
2 tablespoons olive oil
½ lemon, juiced
1 teaspoon lemon, zest, minced
TAHINI DRESSING INGREDIENTS:
¼ cup tahini
¼ cup lukewarm water
3 tablespoons lemon juice
2 tablespoons olive oil
½ teaspoon turmeric
¼ teaspoon cayenne pepper
¼ teaspoon sea salt

Zester
Instructions
COUSCOUS DIRECTIONS:
- Combine couscous, peas, and 1 ½ cups boiling water in a large bowl.
- Cover with plastic wrap and let steam for 5 minutes.
- Soak raisins in ¼ cup boiling water for 5 minutes to plump them.
- Fluff couscous with a fork.
- Add mint leaves, olive oil, lemon juice, and zest to the couscous. Mix well.
TAHINI DRESSING DIRECTIONS:
- Combine all ingredients in a small mixing bowl.
- Mix until smooth.
- Serve couscous in bowls and drizzle tahini on top of couscous.
Cooking Tip
Make the tahini dressing in advance and store it in the refrigerator for up to 4 days to save time
