Ingredients

COUSCOUS INGREDIENTS:

1 ⅓ cups couscous, dry

½ cup frozen peas, thawed

1 ¾ cups boiling water

¼ cup raisins

½ cup mint leaves, chopped

2 tablespoons olive oil

½ lemon, juiced

1 teaspoon lemon, zest, minced

TAHINI DRESSING INGREDIENTS:

¼ cup tahini

¼ cup lukewarm water

3 tablespoons lemon juice

2 tablespoons olive oil

½ teaspoon turmeric

¼ teaspoon cayenne pepper

¼ teaspoon sea salt

Zester

Instructions

COUSCOUS DIRECTIONS:

  1. Combine couscous, peas, and 1 ½ cups boiling water in a large bowl.
  2. Cover with plastic wrap and let steam for 5 minutes.
  3. Soak raisins in ¼ cup boiling water for 5 minutes to plump them.
  4. Fluff couscous with a fork.
  5. Add mint leaves, olive oil, lemon juice, and zest to the couscous. Mix well.

TAHINI DRESSING DIRECTIONS:

  1. Combine all ingredients in a small mixing bowl.
  2. Mix until smooth.
  3. Serve couscous in bowls and drizzle tahini on top of couscous.

Cooking Tip

Make the tahini dressing in advance and store it in the refrigerator for up to 4 days to save time
