1 tablespoon olive oil
1 boneless skinless chicken breast
2 ¼ cups corn kernels (for a different flavor you can roast the corn first)
1 zucchini cubed
1 bell pepper chopped (use red to add more color)
1 red onion diced
1 teaspoon garlic powder
1 teaspoon cumin
½ teaspoon black pepper
2 teaspoon Mrs. Dash
1 package Uncle Ben’s ready rice, prepared
Makes: 4 Serving size: 1 cup
1. In a large skillet, cook chicken until juices run clear.
2. Remove from pan.
3. Add oil, corn, pepper, zucchini and onion. Sauté on medium heat until tender.
4. Add spices.
5. Cube chicken and return to pan with vegetables. Reduce heat to medium low.
6. Add prepared rice and sauté 2 more minutes.
