Coco Grapes
This is a perfect year-round recipe to indulge your sweet tooth. Grapes can add fiber to your diet while staying low in phosphorus and potassium.

Ingredients
½ pound concord or other small grapes, stems removed (about 75 grapes)
4 ounces semisweet chocolate (gluten free, Guittard®)
2 tablespoons unsweetened cocoa powder (gluten free, Guittard®)
Special Equipment:
Double Boiler or microwave
Baking sheet
Parchment paper or Silat
Instructions
- Wash and dry the grapes well. Place in a large bowl.
- Melt the chocolate in a double boiler on medium heat or in the microwave at 30 second intervals until softened, stirring after each interval.
- Set out the baking sheet on a counter. Line with parchment paper.
- Add the melted chocolate to the grapes about 1 tablespoon at a time.
- Stir well with a wooden spoon. Scrape the sides of the bowl and stir through the center of the mixture to coat all the grapes evenly.
- Let chocolate begin to set, sprinkle the cocoa powder using a small strainer little by little over the surface.
- Toss the grapes gently as you sift. Add the cocoa until all of the grapes are well coated and separated.
- Spread onto the prepared baking sheet.
- Cover with foil and refrigerate until the chocolate is set (1-2 hours).
- Enjoy as a snack or dessert. Store refrigerated in a sealed container.
Cooking Tip
Store Coco Grapes in the freezer to keep grapes for longer and as a refreshing alternative to ice cream!
