Coco Coffee Frappe
This cool and refreshing beverage offers the jolt of caffeine along with the lusciousness of a ‘frappe.’ Yet, because it is homemade, it has a fraction of the sugar of commercial frappes or similar beverages.

¾ cup coffee, brewed strong, room temperature
1 ¼ cup ice
½ cup coconut milk
2 teaspoons maple syrup
¼ teaspoon cinnamon
Special Equipment:
Blender
Instructions
- Place all the ingredients in the blender.
- Blend until very frothy, approximately 1 minute in standard blender.
- Pour into 2 glasses.
- Serve with additional ice and optional garnish of a pinch of cinnamon.
Cooking Tip
The fat in the coconut milk may harden slightly when it makes contact with the ice; stir well after you pour to loosen the frothy top layer in each glass.
