Citrus Sesame Cookies
The lush toasty flavor of sesame seeds elevates a basic butter cookie. These seeds are an exceptional source of copper, manganese, iron, and calcium, which together can support respiratory health, prevent vascular disease, help fight cancer, and reduce the severity of premenstrual symptoms.

¾ cup unsalted butter, at room temperature
½ cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
2 tablespoons sesame seeds, toasted
½ teaspoon baking soda
1 teaspoon lemon zest, freshly grated
1 teaspoon orange zest, freshly grated
Instructions
- Preheat the oven to 350°F.
- In a large bowl and using a mixer, beat together the butter and sugar on high speed until thick and fluffy, about 3 minutes.
- Add the egg and vanilla and beat to mix thoroughly, scraping down the sides of the bowl.
- In a small bowl, stir together the flour, sesame seeds, baking soda, lemon zest, and orange zest.
- Add the flour mixture to the butter mixture, and stir until well blended.
- Roll the dough into a long cylinder about 2 inches in diameter, and wrap in plastic wrap. Refrigerate for 1 hour.
- Line a baking sheet with parchment paper.
- Cut the firm cookie dough into ½-inch-thick rounds, and place them on the prepared baking sheet.
- Bake for 10 to 12 minutes until lightly golden. Cool completely on wire racks.
- Store in a sealed container in the refrigerator for up to 1 week, or in the freezer for up to 2 months.
Cooking Tip
To toast sesame seeds: Stir seeds in a pan over medium heat until golden brown (about 5 minutes)
