Cilantro Lime Chicken

Marinated in a flavorful mixture of cilantro and lime juice and seared to perfection, this dish will leave you craving for more. Pair with some white rice or black beans for a hearty meal.

Serving size

¼ pound of chicken

Ingredients

½ cup cilantro, roughly chopped

¼ cup olive oil

2 limes, zested and juiced

½ teaspoon black pepper

½ teaspoon ground cumin

¼ teaspoon kosher salt

1 pound chicken cutlets

Instructions

  1. Mix together the cilantro, olive oil, lime zest and juice, pepper, cumin, and salt. Divide in two and reserve half for serving.
  2. Mix the other half of the marinade with the chicken, cover, and refrigerate for 45 minutes. Let sit at room temperature for 15 minutes before cooking.
  3. Place a nonstick skillet over medium heat. Add the chicken and cook until browned on each side or cooked to an internal temperature of 165°F, about 3 minutes per side.
  4. Serve with the reserved cilantro lime sauce spooned over top.

Cooking Tip

Short on time? You can cut the marinating time to 20 minutes; 10 minutes in the fridge and let sit for another 10 minutes at room temperature before cooking.
