Cilantro Lime Chicken

Marinated in a flavorful mixture of cilantro and lime juice and seared to perfection, this dish will leave you craving for more. Pair with some white rice or black beans for a hearty meal.

Ingredients
½ cup cilantro, roughly chopped
¼ cup olive oil
2 limes, zested and juiced
½ teaspoon black pepper
½ teaspoon ground cumin
¼ teaspoon kosher salt
1 pound chicken cutlets
Instructions
- Mix together the cilantro, olive oil, lime zest and juice, pepper, cumin, and salt. Divide in two and reserve half for serving.
- Mix the other half of the marinade with the chicken, cover, and refrigerate for 45 minutes. Let sit at room temperature for 15 minutes before cooking.
- Place a nonstick skillet over medium heat. Add the chicken and cook until browned on each side or cooked to an internal temperature of 165°F, about 3 minutes per side.
- Serve with the reserved cilantro lime sauce spooned over top.
Cooking Tip
Short on time? You can cut the marinating time to 20 minutes; 10 minutes in the fridge and let sit for another 10 minutes at room temperature before cooking.
