Chocolate Granola

Once you have made your own granola, you will never want to buy it again. Fresh from the oven, this version, with a hint of chocolate and nuts, is begging to be your new favorite breakfast topping.

Ingredients

3 cups rolled oats

½ cup (48 grams) pecans, unsalted

⅓ cup (36 grams) sliced almonds, unsalted

⅓ cup cocoa powder, unsweetened

2 tablespoons chia seeds

½ cup dried cherries, sweetened

⅓ cup maple syrup

¼ cup coconut oil, melted

1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Combine oats, pecans, almonds, cocoa powder and chia seeds into a food processor. Pulse a few times to roughly chop the oats, nuts and seeds.
  4. Transfer chopped oats, nuts and seeds to a medium bowl. Add dried cherries, maple syrup, coconut oil and vanilla extract.
  5. Mix everything with a spatula until well combined.
  6. Spread the mixture onto the lined baking sheet.
  7. Bake for 20 minutes. Stir granola mixture halfway through baking.
  8. Cool granola and transfer to an airtight container.

Cooking Tip

Don’t have a food processor? You can still make the recipe by chopping all the oats, seeds and nuts with a sharp knife by hand.
