Chocolate Granola Bites
Crunchy, slightly sweet, with a bit of heat and covered in chocolate. Holiday spices are used but this can be enjoyed any time of year.

Ingredients
½ cup (100 grams) raw pecans (or another nut)
2 tablespoons dried apples or dried cinnamon apples
3 tablespoons sugar free maple syrup (or regular maple syrup)
2 tablespoons Swerve® brown (or regular brown sugar)
¼ cup (70 grams) almond butter
1 teaspoon cinnamon
1 teaspoon ginger
¼ teaspoon allspice
¼ teaspoon nutmeg
⅛ teaspoon pepper
⅛ teaspoon kosher salt
1 teaspoon vanilla
¼ cup (35 grams) no salt sunflower seeds
¼ cup (28 grams) no salt sliced almonds
1 cup (6-ounces) Lily’s® no sugar chocolate chips (optional, included in nutrient analysis)
1 tablespoon coconut oil (or unsalted butter) (optional, included in nutrient analysis)
1 tablespoon of white chocolate, grated (optional, included in nutrient analysis)
1 tablespoon of unsweetened desiccated (dried out) coconut (optional, included in nutrient analysis)

Instructions
- Process the pecans and apples to coarse bits in a food processor. Set aside.
- Heat the maple syrup, brown sweetener, almond butter, cinnamon, ginger, allspice, nutmeg, pepper, and salt in a large saucepan over medium-low, until combined and mix has thinned a bit.
- Remove from heat and stir in the vanilla.
- Add the pecans and apples, sunflower seeds, and almonds.
- Scoop 1 tablespoon of the mix and place on a parchment lined sheet (oil the scooper as needed or oil your hands to shape).
- Chill for 60 minutes or freeze for 30 minutes.
- Optional chocolate coating: Place a saucepan with 1 to 2 inches of water over medium heat and bring to a simmer. Put the chocolate and oil into a heat safe bowl and place over the pan (Do NOT let the bowl touch the water). Stir the chocolate until chips are 70% melted. Remove from heat and continue to whisk until the chips have melted.
- Using two forks, dip each bite into the chocolate and place back on the parchment lined sheet.
- Alternately, place a wire cooling rack on top of a baking sheet and pour the chocolate over each bite.
- If desired, sprinkle sugar free white chocolate or coconut over top for decoration.
- Chill for 30 minutes or chocolate is set.
Cooking Tip
May use another nut or nut butter. If desired, leave out the chocolate and enjoy as is.
