Chocolate Granola

Once you have made your own granola, you will never want to buy it again. Fresh from the oven, this version, with a hint of chocolate and nuts, is begging to be your new favorite breakfast topping.

3 cups rolled oats
½ cup (48 grams) pecans, unsalted
⅓ cup (36 grams) sliced almonds, unsalted
⅓ cup cocoa powder, unsweetened
2 tablespoons chia seeds
½ cup dried cherries, sweetened
⅓ cup maple syrup
¼ cup coconut oil, melted
1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- Combine oats, pecans, almonds, cocoa powder and chia seeds into a food processor. Pulse a few times to roughly chop the oats, nuts and seeds.
- Transfer chopped oats, nuts and seeds to a medium bowl. Add dried cherries, maple syrup, coconut oil and vanilla extract.
- Mix everything with a spatula until well combined.
- Spread the mixture onto the lined baking sheet.
- Bake for 20 minutes. Stir granola mixture halfway through baking.
- Cool granola and transfer to an airtight container.
Cooking Tip
Don’t have a food processor? You can still make the recipe by chopping all the oats, seeds and nuts with a sharp knife by hand.
