Chickpea Turnip Greens Tacos

This is one of the healthiest, easiest, and quick types of tacos you can prepare from scratch at home. The lemon and feta cheese add just enough tang to enhance the flavor – a real crowd-pleaser!

Ingredients

1 can chickpeas

1 small red onion, minced

1 clove of garlic, finely minced

Black pepper, freshly grounded, to taste

1 tablespoon lemon juice

1 tablespoon parsley, chopped

1½ tablespoons olive oil

1½ (10-ounce) package frozen turnip greens, thawed

12 small corn tortillas

1 cucumber, shredded

2 ounces Feta cheese, crumbled

¼ teaspoon sea salt (optional)

Instructions

  1. Mix the chickpeas, onions and garlic in a large bowl.
  2. Season with pepper and salt, if desired.
  3. Add lemon juice, parsley, and olive oil.
  4. Mix until you have a chunky paste.
  5. Add thawed turnip greens into chickpea mixture. Toss together.
  6. Take a corn tortilla (warmed in the oven or skillet, if you prefer) and spoon on some chickpea turnip greens mixture.
  7. Serve with shredded cucumber and feta cheese garnish. Enjoy!
