Chicken Cabbage Salad

The cabbage part of this dish is quite crunchy in itself, but the almonds provide extra texture and a rich nutty flavor. Almonds are the fruit of the almond tree, and are a stellar source of monounsaturated fats, which support a healthy cardiovascular system and reduce cholesterol.
Almonds are also high in vitamin E, manganese, copper, and magnesium.

Dressing:
½ cup Low-Sodium Mayonnaise
2 tablespoons apple cider vinegar
1 teaspoon sugar
Black pepper, freshly grounded, to taste
Salad:
4 cups cabbage, finely shredded
¼ cup carrot, shredded
2 scallions, white and green parts, julienned
1 cup cooked chicken breast, chopped
2 tablespoons fresh cilantro, chopped
2 tablespoons slivered almonds, toasted
Instructions
To prepare dressing:
- In a small bowl, whisk together the mayonnaise, vinegar, and sugar and season with pepper. Set aside.
To prepare salad:
- In a large bowl, toss together the cabbage, carrot, scallions, chicken, and cilantro.
- Add the dressing to the salad, and toss to coat.
- Top with the almonds, and serve.
Cooking Tip
This salad is a variation of coleslaw, a dish that gets better tasting as it sits. If you have the time, make the slaw portion of the salad and combine it with the dressing the day before you need it, and add the chicken, cilantro, and almonds just before serving.
