Chicken Alphabet Soup

When you were a child and were sick at home in bed, you might remember that there was nothing better than a steaming bowl of homemade chicken soup to soothe your throat and spirits. Adorable noodles shaped like letters create a whimsical effect that is just fun and, as a bonus, delicious.

You can replace the alphabet noodles with more traditional noodles, but let’s admit it, even adults can appreciate a meal that you can spell words with while you eat.

Ingredients

1 tablespoon olive oil

½ sweet onion, diced

2 teaspoons garlic, minced

4 cups water

1½ cups cooked chicken breast, chopped

1 cup sodium-free chicken stock

2 celery stalks, chopped

1 carrot, peeled and diced

½ cup dried alphabet noodles

Black pepper, freshly grounded, to taste

2 tablespoons fresh parsley, chopped

Instructions

  1. In a large saucepan over medium-high heat, heat the olive oil.
  2. Add the onion and garlic, and sauté until softened, about 3 minutes.
  3. Add the water, chicken, chicken stock, celery, and carrot. Bring to a boil, then reduce the heat to medium-low and simmer until the vegetables are tender-crisp, about 15 minutes.
  4. Add the noodles, stir, and simmer the soup until the noodles are tender, about 15 minutes.
  5. Season with pepper and serve hot, topped with the parsley.

Cooking Tip

You may never have noticed the small box of alphabet noodles in the pasta section of your supermarket unless you were looking for it. Select regular noodles rather than whole-wheat to keep the phosphorus and potassium levels lower.
