Ingredients

3 eggs, at room temperature

2 egg whites, at room temperature

½ cup cream cheese, at room temperature

¼ cup unsweetened rice milk

1 tablespoon scallion, green part only, finely chopped

1 tablespoon fresh tarragon, chopped

2 tablespoons unsalted butter

Freshly ground black pepper, to taste

Instructions

  1. In a medium bowl, whisk together the eggs, egg whites, cream cheese, rice milk, scallions, and tarragon until well blended and smooth.
  2. In a large skillet over medium-high heat, melt the butter, swirling to coat the skillet evenly.
  3. Pour in the egg mixture and cook, stirring, for about 5 minutes or until the eggs are thick and the curds creamy. Season with pepper.

Cooking Tip

You can add chopped, cooked chicken or vegetables such as asparagus and red bell pepper if you want a more substantial meal or need to feed more people.
