Cheddar Chive Scones

A nice alternative to sweet scones, this savory version will surprise you with its light texture.

Ingredients

3 cups self-rising flour

1 tablespoon baking powder

7 tablespoons butter, chilled and cut into ¼ inch- sized pieces

⅔ cup sharp cheddar cheese, grated

¼ cup chives or green onion, chopped

3 large eggs (2 for scones, 1 for egg wash)

½ cup buttermilk

1 cup milk

½ teaspoon sea salt (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Whisk together the flour, baking powder and salt, if desired, in a large bowl.
  3. Cut the butter into the flour with a pastry cutter or food processor.
  4. Add the cheddar and chives and stir to incorporate evenly.
  5. Whisk 2 eggs and combine with the buttermilk and milk.
  6. Add to the flour mixture and stir until just moist. The dough should be sticky.
  7. Turn the sticky dough out onto a well-floured board and knead lightly.
  8. Cut the dough in half. Roll each half into a circle, about ¾ inch thick.
  9. Transfer to baking sheet lined with parchment paper.
  10. Cut each circle into 8 equal wedges.
  11. Whisk the remaining egg in a small dish and brush on top of the scones.
  12. Let the scones rest for about 10 minutes before baking, allowing the baking powder to activate, making the scones rise higher, and be fluffier.
  13. Bake for 15-20 minutes, or until golden. Cool and enjoy!

Cooking Tip

You can make your own self-rising flour with the addition of 1½ tablespoon baking powder and ¼ teaspoons salt for each cup of flour.

You can also make your own buttermilk with 2 teaspoons of lemon juice added to 1 cup milk and let sit for 5 minutes until thickened.

The fluffiness of these scones can be retained for up to 4 days, by storing in an airtight container.
