Capirotada (Mexican Bread Pudding)
Bread pudding is a delicious dessert, and different countries have their own take on it. Try this one and spice it up with cloves and cinnamon.

8-ounce French bread, cut into ½-inch cubes
¼ cup raisins
¼ cup Spanish peanuts
1 cup brown sugar
1 cup water
2 cinnamon sticks
2 whole cloves
2 tablespoons unsalted butter
3 ounces Monterey jack cheese, shredded
2 tablespoons candy sprinkles
Instructions
- Mix the bread, raisins, and nuts in a large bowl. Set aside.
- Place the sugar, water, cinnamon sticks, and cloves into a saucepan. Bring to a boil, stir to dissolve sugar, then reduce to a simmer, and cook 10 minutes, uncovered and untouched.
- Pour the sugar mixture over the bread mixture and carefully toss to absorb.
- Place into a greased 8 x 8-inch pan.
- Cover with aluminum foil and chill for 30 minutes.
- Once chilled, preheat oven to 350°F.
- Bake for 20 minutes, covered.
- Remove the foil and bake another 15 minutes or until cheese is golden. If needed, broil for 3 to 5 minutes to brown the cheese.
- Remove from oven and sprinkle with candy sprinkles.
- Serve warm.
Cooking Tip
A sugar substitute can be used to lower the amount of sugar in this recipe.
