¼ cup chopped onion
1 cup chopped red cabbage
½ cup chopped broccoli
1 tablespoon oil
2–3 tablespoon water
¼ teaspoon tarragon
¼ teaspoon garlic powder
¼ teaspoon onion powder
Ground black pepper
Ground red pepper
1 English muffin, split and toasted
2 tablespoon grated parmesan cheese
Makes: 2 Serving size: 1/2 muffin & 3/4 cup vegetables
- Stir-fry vegetables in oil in a large skillet or wok over medium heat for 2–3 minutes.
- Add water and cover.
- Steam for 5 minutes.
- Add spices during last 2 minutes.
- Serve over English muffin halves and sprinkle with Parmesan cheese.
