Breakfast Sausage and Pepper Skillet

A quick and easy recipe to make with sweet peppers and savory sausage.

Ingredients

1 teaspoon oil

2 Morning Star Farms breakfast sausage patties, classic flavor

2 large eggs, beaten

½ teaspoon low sodium Worcestershire sauce

1 cup red bell pepper, diced

1-ounce shredded sharp cheddar

Instructions

  1. Heat the oil in a pan over medium heat.
  2. Cook the sausage 3 to 4 minutes, flipping halfway, until sausage is 165°F and sides are crispy. Turn off heat and move to a paper towel lined plate.
  3. Let sausage rest for 2 minutes then move them to a cutting board and dice into small pieces. Set aside.
  4. Beat the eggs and Worcestershire sauce together. Set aside.
  5. Heat the same pan over medium heat and add the bell peppers. Cook for 3 to 4 minutes or until tender crisp.
  6. Turn heat down to medium-low and add the diced sausage. Mix well.
  7. Add eggs to the pan. Cook about 15 seconds, then begin stirring frequently, for 2 to 3 minutes or until eggs are cooked and look nearly dry.
  8. Remove from heat and sprinkle cheese over top. Let stand until cheese melts.
  9. Divide into 2 portions and serve.

Cooking Tip

Serve with ¼ cup of your favorite fruit or serve ¼ portion with toast and fruit. Cherry, peach, melons, strawberries, pear, nectarines, pineapple, raspberries, apples, or apricots all pair well with this dish.
