Ingredients

10-ounces fresh sweet potatoes, peeled and chopped

1 tablespoon olive oil

3 Morning Star® breakfast sausage patties, chopped

½ cup red onion, chopped

½ cup radishes, chopped

1 teaspoon garlic, minced

6 tablespoons JUST EGG® vegan egg mixture

½ teaspoon pepper

¼ teaspoon cinnamon

⅛ teaspoon ground ginger

¾ cup diced peaches

¼ cup fresh parsley, chopped

Instructions

  1. Place chopped sweet potatoes into a pot of water, turn on heat and boil until tender but firm, about 4 to 7 minutes depending on the cut size and pan size. Drain and set aside.
  2. Heat the tablespoon of oil in a large skillet over medium heat. When hot, add the sausage and cook for 3 minutes.
  3. Add the onion and radishes and cook 3 minutes. Add the garlic and cook 30 seconds.
  4. Add the sweet potatoes and cook for 2 minutes.
  5. Mix the egg mixture with the pepper, cinnamon, and ginger.
  6. Pour the egg mixture over the mixture in the pan and cook 1 to 2 minutes, stirring constantly until eggs are set.
  7. Remove from heat and stir in the peaches and parsley.
  8. Serve 1 cup per person.

Cooking Tip

If desired, you can top with vegan cheese (not included in nutrient analysis).
