Blueberry Coconut Overnight Oats

⅓ cup rolled oats

⅔ cup light coconut milk, canned

⅓ cup Greek yogurt, plain, nonfat

1 teaspoon vanilla extract

⅕ teaspoon honey

½ teaspoon cinnamon, grounded

16 blueberries

Instructions

  1. In a small bowl, mix together the oats, coconut milk, Greek yogurt, vanilla extract, honey and cinnamon. For a thicker consistency, add less coconut milk.
  2. Cover and store in the fridge overnight or for at least 2 hours.
  3. Remove from fridge, garnish with blueberries, and enjoy cold.
