Blackberry Kale Smoothie
Blackberries in their natural state are decadent, plump, and richly hued. They seem to burst with tart juiciness and rich flavor, and so they are perfect for smoothies. If you don’t want the seeds in your smoothie, strain them out before putting the liquid back in the blender and adding the ice.
Blackberries are packed with vitamin C, fiber, antioxidants, and beneficial phytochemicals.

1 cup fresh or frozen blackberries
½ cup fresh kale, stemmed and chopped
1 cup Homemade Rice Milk (or use unsweetened store-bought)
½ teaspoon vanilla extract
½ teaspoon honey
¼ teaspoon ground cinnamon
3 ice cubes
Instructions
- In a blender, put the blackberries, kale, rice milk, vanilla, honey, and cinnamon, and blend until smooth.
- Add the ice cubes, and blend until thick and smooth.
- Pour into two tall glasses and serve immediately.
Cooking Tip
Raspberries and spinach can be substituted for the blackberries and kale for a different tasting smoothie. The color will not be as vibrant, but the finished drink will be sweeter and earthier in flavor.
