Berry Baked Oatmeal
If you never made baked oatmeal, think again. It’s like the warm, crunchy cobbler without the emphasis on fruit and a delectable way to start the day.

½ cup pecans, chopped
Cooking spray
2 cups old fashioned rolled oats
1 teaspoon baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon ground ginger
¼ teaspoon sea salt
2 cups milk
¼ cup maple syrup
1 large egg
1 tablespoon butter
1 teaspoon vanilla
1 cup blueberries (frozen or fresh)
Special Equipment:
8 x 10 inch baking dish
Instructions
- Preheat oven 375°F.
- Pour pecans onto a 9-inch, rimmed baking sheet lined with parchment. Toast for 4 to 5 minutes, until fragrant.
- Spray an 8 x 10-inch baking pan with cooking spray.
- Combine the oats, toasted pecans, baking powder, cinnamon, ginger, and salt in a medium mixing bowl. Whisk to combine.
- Combine the milk, maple syrup, egg, half of the butter and vanilla in a separate mixing bowl. Whisk until blended.
- Arrange ½ frozen berries evenly over the bottom of the prepared baking dish (no need to defrost frozen fruit first).
- Cover the fruit with the dry oat mixture. Drizzle the wet ingredients over the oats.
- Wiggle the baking dish to make sure the milk moves down through the oats. Pat down any dry oats resting on top.
- Scatter the remaining berries across the top.
- Bake for 40 minutes, until the top is nice and golden.
- Remove from the oven and cool for a few minutes. Drizzle the remaining melted butter on the top before serving.
- Cut into 8 even squares and serve one square per portion.
Cooking Tip
You can cut out the squares and freeze individually in aluminum foil. Un-thaw by removing foil and heating in a microwave for 1 to 2 minutes. Alternatively, reheat in the oven at 325°F for 5 minutes or until it heats to your desired temperature.
