Barley Porridge with Miso

Break the monotony of your breakfast routine with this super easy, quick and delectable barley porridge!

Serving size

1 cup

Ingredients

2 cups water

½ cup pearl barley

2 tablespoons miso paste

½ teaspoon toasted sesame oil

¼ cup scallions, chopped

Ground black pepper, to taste

Sea salt, to taste (optional)

Instructions

  1. Bring the water to a boil in a medium, heavy bottomed saucepan.
  2. Stir in the pearl barley and salt (if using).
  3. Cover pot and remove from heat.
  4. Let pot sit, covered, at room temperature overnight.
  5. The next morning, set pot over medium heat.
  6. Uncover and bring to a boil.
  7. Reduce heat to a simmer. Cook for 5 minutes, stirring often, until mixture is thick and creamy.
  8. Add additional water, if needed, to achieve desired, creamy consistency.
  9. Remove from heat. Stir in miso paste and mix until well distributed.
  10. Add additional miso paste to taste.
  11. Divide into small bowls. Drizzle in sesame oil and sprinkle on scallion garnish on each bowl.
  12. Season with ground pepper and enjoy.

Cooking Tip

You can save 20 minutes or more by soaking the barley in warm water, covered, overnight before cooking.
