Barley Porridge with Miso
Break the monotony of your breakfast routine with this super easy, quick and delectable barley porridge!

Ingredients
2 cups water
½ cup pearl barley
2 tablespoons miso paste
½ teaspoon toasted sesame oil
¼ cup scallions, chopped
Ground black pepper, to taste
Sea salt, to taste (optional)
Instructions
- Bring the water to a boil in a medium, heavy bottomed saucepan.
- Stir in the pearl barley and salt (if using).
- Cover pot and remove from heat.
- Let pot sit, covered, at room temperature overnight.
- The next morning, set pot over medium heat.
- Uncover and bring to a boil.
- Reduce heat to a simmer. Cook for 5 minutes, stirring often, until mixture is thick and creamy.
- Add additional water, if needed, to achieve desired, creamy consistency.
- Remove from heat. Stir in miso paste and mix until well distributed.
- Add additional miso paste to taste.
- Divide into small bowls. Drizzle in sesame oil and sprinkle on scallion garnish on each bowl.
- Season with ground pepper and enjoy.
Cooking Tip
You can save 20 minutes or more by soaking the barley in warm water, covered, overnight before cooking.
