Apple Cookies

This delightfully nutritious snack is a great way to gain an energy burst midday or to start the day with something satisfyingly different. They make a terrific addition to a brunch table as well. Adding Concord grapes in September gives them a nice seasonal twist!

1 large apple, cored
2 tablespoons almond butter
⅓ cup muesli
¼ cup fresh blueberries
Instructions
- Slice apple horizontally into thin rings, about 8 rings for large apples.
- Spread some almond butter on each apple ring.
- Sprinkle the muesli on top.
- Add the blueberries. Arrange on a serving plate. Enjoy!
Cooking Tip
You may substitute muesli with granola, but do note that it typically contains more added sugar than muesli, so it is important to follow the serving size.
Add some variety to this recipe by substituting fresh blueberries for sliced concord grapes or some of your favorite dried fruits.
