Apple Chocolate Pecan Treats

A healthy treat that is a twist on chocolate fondue. Refrigerating these treats allows you to enjoy over 2-3 days.

Ingredients

2 very large (450 grams) Fuji apples

10-ounces (about 2 cups) semi-sweet chocolate chips

1 tablespoon coconut oil

1 cup pecans, chopped

Baking tray and parchment paper

Instructions

  1. Slice apples vertically (top to bottom) into ½-inch pieces, approximately 6 pieces per apple.
  2. Remove the seeds/seed enclosures from the center pieces (containing core) with the tip of a paring knife.
  3. Melt chocolate chips in the microwave on high for about 2 minutes (in 30 second intervals to avoid burning the chocolate). Alternatively, heat chocolate over double boiler: place chocolate in metal bowl, set over saucepan of boiling water until just melted.
  4. Stir in coconut oil until smooth.
  5. Dip apple slices in chocolate using a fork or tongs.
  6. Place each dipped treat on a parchment-lined cookie sheet.
  7. Sprinkle each with about 1 tablespoon of the chopped pecans.
  8. Refrigerate for about 1 hour or until chocolate is set.
  9. Serve and enjoy as a great anytime treat or healthy dessert.

Cooking Tip

Smooth over fork marks or tong marks with a knife or pastry spatula for more professional results.
