Makes
Serving size
Ingredients
2 very large (450 grams) Fuji apples
10-ounces (about 2 cups) semi-sweet chocolate chips
1 tablespoon coconut oil
1 cup pecans, chopped
Special Equipment
Baking tray and parchment paper
Instructions
- Slice apples vertically (top to bottom) into ½-inch pieces, approximately 6 pieces per apple.
- Remove the seeds/seed enclosures from the center pieces (containing core) with the tip of a paring knife.
- Melt chocolate chips in the microwave on high for about 2 minutes (in 30 second intervals to avoid burning the chocolate). Alternatively, heat chocolate over double boiler: place chocolate in metal bowl, set over saucepan of boiling water until just melted.
- Stir in coconut oil until smooth.
- Dip apple slices in chocolate using a fork or tongs.
- Place each dipped treat on a parchment-lined cookie sheet.
- Sprinkle each with about 1 tablespoon of the chopped pecans.
- Refrigerate for about 1 hour or until chocolate is set.
- Serve and enjoy as a great anytime treat or healthy dessert.
