Apple Beef Stew
Hearty, savory beef stew with a touch of sweet apple flavor.

Ingredients
1 cup sweet-tart apple, diced
½ teaspoon lemon juice
2 slices low sodium bacon, diced
½ cup red onion, chopped
1 garlic clove, minced (1 teaspoon)
½ pound beef stew meat, diced small
1 teaspoon ground cinnamon
1 teaspoon dried tarragon
⅛ teaspoon kosher salt
¼ teaspoon ground allspice
Pinch of ground cloves
⅛ teaspoon red pepper flakes or cayenne
2 tablespoons balsamic vinegar
2-ounces apple cider (no potassium added)
1 tablespoon Worcestershire sauce
14-ounces water
2 teaspoons low sodium beef broth powder (Orrington Farms® suggested)
½ cup radishes, diced (may substitute turnips)
1 cup fresh green beans, cut into chunks (or no salt added canned)
¾ cup carrots, sliced (or no salt added canned)
¼ cup celery, sliced
2 tablespoons arrowroot powder
2 tablespoons water
1 teaspoon fresh orange zest
Instructions
- Toss the apple with the lemon juice to keep from browning. Set aside ¼ cup for adding at the end.
- Place the bacon into a large pot and turn the heat to medium. Cook 4 to 6 minutes or until bacon begins to release the fat. Edges will look crisp, and fat will be bubbly.
- Add the onion and cook for 2 minutes.
- Add the garlic and cook 30 seconds.
- Add the beef and cook for 3 minutes.
- Add all the seasonings, the balsamic vinegar, apple cider, Worcestershire sauce and water. Scrape any bits off the bottom.
- Add broth powder, radishes, green beans, carrots, celery, and ¾ cup of the apples. Bring to a soft boil over medium heat, cover, and let cook until carrots are tender-crisp, about 20 to 40 minutes, depending on size of vegetable cuts.
- If you are using canned green beans and/or carrots, do not add yet.
- Mix the arrowroot powder with the 2 tablespoons of water and stir into the pot. Cook until it starts to thicken a bit.
- Turn off heat, add orange zest, and remaining ¼ cup of apples. Stir well (if you are using canned green beans and/or carrots, add now). Cover and let stand 1 minute.
- Serve with orange slice, cherries, or your favorite crackers or biscuits (if desired).
Cooking Tip
For super tender beef, make this in an InstaPot®. Follow the instructions but use the InstaPot®’s sauté setting. Then set for 40 minutes on high pressure instead of simmering on the stove.
