Creamy Chicken Mac
This macaroni and cheese recipe is quick, delicious and a great way to use up leftover chicken for added protein. This dish is a perfect addition to your weeknight dinner rotation.

2 tablespoons margarine
2 tablespoons flour
¼ cube low-sodium chicken bouillon
1 ½ cups water
2 tablespoons cream cheese
1 tablespoon mayonnaise
½ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
¼ teaspoon salt
4-ounce chicken breast, cubed and cooked
3 cups elbow macaroni, cooked to package instructions
1 teaspoon lemon juice (optional, included in nutritional analysis)
Instructions
- Add margarine and flour to a skillet on medium heat, cook a few minutes, whisking to prevent lumps from forming.
- In a separate bowl, dissolve bouillon in water. Add to skillet slowly, whisking as it thickens.
- Melt in cream cheese and mayonnaise.
- Add onion and garlic powders, pepper, and salt, continuing to stir.
- Add chicken and macaroni, stir to coat.
- Add lemon juice at the end (if desired).
Cooking Tip
Add in some greens such as peas or cooked broccoli.
