Spiced Chicken Breast with Southern Chocolate Gravy

Chocolate gravy is a forgotten Southern concept that marries well with spiced poultry. Be sure to marinate the chicken for at least one hour to ensure the spices penetrate and offer a strong savory contrast to the chocolate gravy.

SPICED CHICKEN BREAST INGREDIENTS:
1 tablespoon coriander seeds
1 teaspoon cumin seeds
5 allspice berries
3 tablespoons smoked paprika
1 large clove garlic, minced
Pinch sea salt
¼ cup canola or other neutral oil
¼ cup orange juice
1 pound chicken breasts, boneless/skinless, cut into 1 ½ inch pieces
4 large peanuts, grated
CHOCOLATE GRAVY INGREDIENTS:
2 tablespoons cocoa powder
1 tablespoon unbleached flour
⅔ cup whole milk
1 tablespoon sugar
Pinch sea salt
¼ teaspoon cayenne pepper
1 tablespoon butter
Special Equipment:
Grill pan or outdoor grill
Spice grinder
Instructions
SPICED CHICKEN BREAST DIRECTIONS:
- Toast coriander, cumin seeds and allspice berries in a sauté pan over medium heat until fragrant. Cool two or three minutes. Grind in a spice grinder until fine powder.
- Pour ground spices into a small mixing bowl. Add paprika and mix well.
- Add garlic, salt, canola oil and orange juice to the spices and mix thoroughly.
- Pour spice rub over the chicken pieces. Mix well with a wooden spoon to coat.
- Marinate at least one hour or up to 4 hours.
- Grill over medium-high heat in a grill-pan or grill outdoors until cooked through.
CHOCOLATE GRAVY DIRECTIONS:
- Combine cocoa powder, flour, milk, sugar, salt and cayenne pepper in a saucepan. Cook over medium heat until thickened. Whisk continually to avoid lumps from forming.
- Remove from heat. Add butter and stir.
- Serve with a portion of gravy on a plate. Arrange chicken breast pieces on top.
- Drizzle a few more drops of gravy onto the chicken.
- Shave the peanut garnish on top with a microplane grater.
Cooking Tip
The gravy can be reserved while the chicken is cooking. Add 1-2 tablespoons of water when you reheat and whisk thoroughly.
